Chocolate for food technologists and engineers
From raw materials to tempering and enrobing
The inaugural Foodlab Academy course: industrial chocolate production, led by Haim Palgi, former chief chocolate technologist at Strauss-Elite confectionery.
This course is taught in Hebrew.
📅 26 Feb – 12 Mar 2026 📍 Foodlab, Yakum 🧪 Hands-on in pairs

This is not a classroom. It is a lab.
Background
Chocolate is the physics of fat, the chemistry of sugar and protein, and the mechanics of particles. Those who understand why chocolate behaves the way it does can solve bloom, viscosity and tempering problems instead of guessing.
The course combined theory with hands-on production in a ball mill, tempering, moulding and enrobing, in a group of ten.
What will you learn?
